The best time of the year!
I love this time of year so. so. much. The color of the leaves on the trees, the dewy, chilly mornings where it is still a little too dark and feels slightly spooky. When it is totally acceptable to eat Chickpea Flour Pumpkin Chocolate Chip Cookies as soon as you wake up.
I wish Halloween fell on a Weekend this year, being that I am in a new, beautiful crazy fun city, but I will just taking being in Denver as a WIN! Too bad kids will go to school bouncing off of the walls. Parents have to go back to work, maybe also bouncing off of the walls...depends on the candy sitch. at work ya know?

I was reading some crazy, slightly weird articles yesterday. APPARENTLY some stores will let you bring in all of your kids candy in exchange for a healthier bag of candy. WHAT?! I mean I think that is awesome that there is an option for that, but also...let kids be kids.
There was another article I read, that actually sounded amazing. YOU READY FOR THIS?! There is a vending machine that will let you trade in your unwanted candy for all Reeses Peanut Butter Cups!!!!!!

To be honest I am actually stoked that Halloween falls on a weekday because I can stay in with my boys (Chirs-the boyf and Finn-our cat) watch movies and make pillowy chickpea flour pumpkin chocolate chip cookies. Pillowy cookies with puddles of chocolate an flaky sea salt. Since the chocolate melts so perfectly I am thinking, why not put the chocolate in the shape of faces!! There is a glimpse of Finny in the cookie photo. He wanted cookies SO BAD. **no kitties consumed any human foods**
They are super simple to make. Delicious flavor combo with the pumpkin, chickpea flour, chocolateeeeee and sea salt & all the fall spices!! This recipe is just toooooo delish and easy to make and I have checked, almost EVERY STORE carries chickepea/garbanzo bean flour! Just get the good chocolate 😉
PRO TIP: put chunks of the chocolate on top of your cookies to make the puddles of chocolate then swirl around with a fork so they are extra melty!
You could say I am pretty pumped on my end!

Pumpkin Chocolate Chip Cookies
Ingredients
- 1 cup canned pumpkin
- 1 ¼ cup coconut sugar
- ½ cup coconut oil melted and cooled
- 1 egg
- 1 tbs. vanilla
- 1 tsp. cinnamon
- Pinch of clove all spice, nutmeg and ginger (I always add double the pinch of ginger)
- 2 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt—more for sprinkling on top
- 2 cups garbanzo bean flour or all purpose flour
- 1 cup dark chocolate chopped or chocolate chips
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl whisk together pumpkin, sugar, oil, egg, and vanilla.
- To the bowl add spices, salt, baking powder, baking soda, and flour and mix until just combined with a spatula.
- Fold in the chocolate and combine.
- Scoop out cookies with a medium sized cookie scoop, 1.5 inches apart form each other.
- Bake for 10 minutes.
