You know those meals that can be changed and modified to anybody's liking? That is what this one is and it is SUCH a satisfying meal...dinner....lunch, sheesh put an egg on it and call it breakfast pasta, THAT IS SUCH A GOOD IDEA!
Now I have to brainstorm some breakfast pasta ideas because those are like the two best food groups right?
If I had it my way & if it was normal, I would eat some form of pasta for every meal for the rest of my life, hence why I obviously just thought of breakfast pasta. Pasta, it's like pizza! You can change it up anyway you like and make it work for whatever dietary needs you or your fam may have and you change up all of the flavors, it is so awesome and I love you pasta, I really do.
Sage. It is the perfect flavor for squash anything and it actually really infuses into the squash when you use it fresh and leave it in bunches. Don't even bother chopping up the garlic. Just smash up the cloves and toss it together with the squash sage and olive oil and it will infuse all of the flavors so nicely! I LOVE feta cheese for this dish, personally because as I am lactose intolerant sheep & goats milk cheese don't bother my stomach as much as other cheeses, but also because the subtle tanginess is so perfect with the other flavors!
The great part about this dish is that you can totally make it plant based without cheese or using a vegan alternative, whateva makes your heart happy! You can also use whatever in-season veggies are available for you!
