These healthy paleo pumpkin pie bars are delicious and addicting! Worth the waiting for them to set up in the fridge and you can make ahead the night before! These taste like a slice of your all time favorite pumpkin pie!
Honestly, I’m obsessed too. These paleo pumpkin pie bars are basically healthy, so it was nearly impossible to not sneak a few bites while I was photographing them. I had a good friend, another blogger, help me set up the shoot and I gave her all of the imperfect pie bar ends! You could say she was pretty stoked about it.
The almond flour cookie crust is everything and more! Flaky and slightly sweet, be careful not to eat it all before you pour your pumpkin filling on top and be sure not to eat your paleo pumpkin pie bar filling before pouring it on top of your cookie crust!
Gently spiced paleo pumpkin pie bar filling, sweet autumnal fragrance filling the house as they bake in the oven. Coconut cream spilling over the counter tops, dripping all over the floor. Cinnamon and cloves is not only scattered on the counter but has dumped out completely on the floor.
Sweet and spicy is filling the air. At least my apartment already tastes like dessert, so I can't be mad at the mess. It will all be worth it. This scene is exactly how most family and friend Thanksgiving dinners go don't you think? Lots of laughing, maybe some crying and a big ol' mess in the kitchen.
But once you sit down with some of your favorite people for one of the best meals of the year, it totally is worth it. Enjoy as is, or top these bars with coconut whipped cream. Seriously easiest ever, coconut cream whipped with a whisk until fluffy! It takes no time at all! Do it, do it, do it!
