I might even suggest topping it with smoky chopped bacon or roasted nuts for an added texture! Just a thought 😉

This is perfect for your celiac and gluten intolerant friends and will swoon not only them, but everybody! I suppose you could make it dairy free or use a dairy free replacement, but in all honesty it just won't be the same!
And being lactose intolerant myself, I'd rather take a dairy pill for one night to eat this pure, mouthwatering meal.
If you have never made risotto, it truly is a labor of love. You must stand there, keep an eye on it, stir it almost continuously. You will wait for your first cup of broth to start to simmer and absorb into the arborio. Then you will add another cup, one at a time until all four cups have been added and absorbed.
A labor of love, that is genuinely worth it.
